Best Buns Ever -Recipe

You are going to start by making the Tangzhong
Tangzhong: 2 tablespoons (20g) bread flour, 2 tablespoons (27g) water, 4 tablespoons (60g) whole milk -Mix together in sauce pan on medium heat until it forms a paste then remove from heat and set aside
Next Get your yeast ready
Yeast: 1/2 cup(120g) whole milk warmed to 95f (30c) and 1 tablespoon (9g) instant yeast, mix together lighty and let sit for 8 minutes.
Now for the dough
Dough: 2.5 cups (320g) Bread flour, 1 teaspoon (7g) fine sea salt, 2.5 tablespoons (35g) granulated sugar, 1 whole egg, 1 egg yolk, 3 tablespoons (42g) unsalted softened butter
Put flour, salt and sugar whisked together in stand mixer with dough hook, add yeast mixture and mix on low, add tangzhong and continue mixing on low, once mixed add remaining ingredients, save the butter for last, once everything is incorporated slowly add the butter 1 tablespoon at a time, then mix on medium low speed for 5-8 minutes
Take your dough out and for ball, place in oiled bowl, cover and let rise for 1 and a half hours.
Preheat the oven to 375 degrees.
Now punch down your dough and divide into 6 even dough balls. Place on oiled cookie sheet (PARCHMENT PAPER HELPS) and cover with another cookie sheet and let rise 2 hours. Once risen brush with a milk& egg egg wash and place in the oven. Bake on 375 for 15-18 minutes. Remove from oven allow to cool on an wire rack before cutting
